March into Spring with Carla

I don’t know about you, but by the time March rolls around, I’m desperate for a change. Winter always seems to drag on just a little too long, and I find myself craving sunshine, fresh air, and a little more color in my life. The moment the weather warms up in Dallas, I’m throwing open the doors, swapping out heavy blankets for lighter ones, and filling every vase in my house with orange tulips and peonies—my absolute favorite spring flowers.
Spring brings one of my favorite joys: entertaining. After months of cold weather keeping us inside, it’s invigorating to open our homes, invite loved ones over, and savor long, relaxed meals together. There’s something so special about this time of year—the air feels fresh, spirits are lifted, and hosting becomes a breeze.
One of my go-to dishes for spring gatherings is a salad I've named The Carlita—a flavorful green salad that’s as easy to make as it is delicious. And it's ideal for hosting as everything can be prepared in advance.
This salad is crisp, light, and the perfect dish for spring entertaining. Since the veggies marinate in the dressing ahead of time, all you have to do is toss before serving—making it an effortless addition to any gathering.
